Crumbled Blueberry Vanilla Kale LivBar is mixed with more pumpkin seeds, sunflower seeds, dried blueberries, and pure maple syrup. Make sure to spread it in one single, even layer on a parchment-lined baking sheet.
Then, it's baked until crisp and bubbly in a hot oven. We also recommend popping the brittle in the freezer after it’s cooled a bit to firm up even more. And if you manage to save some for later, store the brittle in an airtight container in the freezer for a few days!
Blueberry Vanilla LivBar Brittle
2 Blueberry Vanilla Kale LivBars, crumbled
¼ cup pumpkin seeds
¼ cup sunflower seeds
3 tbsp dried blueberries
½ cup pure maple syrup
½ tsp vanilla extract
Preheat the oven to 350 degrees Fahrenheit and line a small baking sheet with parchment paper.
Add all ingredients to a small bowl and stir well to combine.
Bake for 15-20 mins, or until syrup is bubbly and the seeds are beginning to brown.
Remove from heat and let cool completely before breaking the brittle into chunks. You can also place the brittle in the freezer for at least an hour to help the maple syrup set.
