Banana sushi is a great breakfast or snack to get the kids involved in and get them excited about eating healthy foods. It’s simply ripe bananas, spread with your favorite nut or seed butter, and rolled in crumbled LivBar. Then, the bananas are frozen before being sliced and enjoyed like sushi. This snack is easy and customizable— just grab your LivBar and seed butter of choice for a protein-packed treat!
Finding healthy snacks for the kids —and yourself!— can be as simple and tasty as this. While it’s convenient and easy to pick up a box of processed, packaged fruit snacks or granola bars, we encourage you to opt for recipes like these. Those processed snacks marketed for kids have ingredient lists a mile long, with foods we don’t even recognize. Rather, this banana sushi is ultimate fun for the kids, versatile, and made with simple, wholesome ingredients.
Plus, there are so many different types of seed and nut butter to choose from! We like sunflower seed butter or pumpkin butter to name a couple. But you can make any seed or nut into a spreadable “butter” at home if you want to: This guide to seed butters by the Nutrition Adventure gives a good rundown of the different types of seed butters and how to make them.
