Easy Gluten Free Blueberry Pancakes
As if we needed another reason to enjoy the perfect breakfast, National Pancake Day is just around the corner on February 16th! Why not take advantage of the special day by whipping up a batch of fluffy, golden pancakes stuffed with fresh blueberries and a crunchy topping? We took the standard blueberry pancake recipe up one notch by crumbling a Blueberry Vanilla Kale LivBar right on top. Plus, this recipe uses a pre-made dry pancake mix, making these Gluten Free Blueberry Pancakes with LivBar topping super easy and quick to cook any morning of the week.
It starts simply with your favorite gluten free pancake mix (we like Pamela’s). After mixing up the batter as directed, drop a few blueberries in the batter. Alternatively, you can place 3-6 blueberries right on top of the pancake after spooning the batter onto the hot grill. We do suggest using a measuring cup when spooning batter onto the hot pan so that they all turn out roughly the same size. And there’s no need for a hot griddle to make pancakes: A large cast iron or nonstick pan will do just fine. But if you do have one, you will be able to cook more pancakes at once, finishing quickly (and eating sooner!).
