It starts simply with your favorite gluten free pancake mix (we like Pamela’s). After mixing up the batter as directed, drop a few blueberries in the batter. Alternatively, you can place 3-6 blueberries right on top of the pancake after spooning the batter onto the hot grill. We do suggest using a measuring cup when spooning batter onto the hot pan so that they all turn out roughly the same size. And there’s no need for a hot griddle to make pancakes: A large cast iron or nonstick pan will do just fine. But if you do have one, you will be able to cook more pancakes at once, finishing quickly (and eating sooner!).
