Gluten Fre Apple Cider Donut

INGREDIENTS

DONUT⠀
• 1 1/2 c gluten free flour⠀
• 1/4 tsp baking soda⠀
• 1 1/2 tsp baking powder⠀
• 1 tsp cinnamon⠀
• 1/4 tsp salt⠀
• 2/3 c coconut sugar ⠀
• 1/2 tsp lemon juice ⠀
• 8 TVs unsalted butter, melted and cooled⠀
• 1 tsp vanilla⠀
• 2 eggs, whites separated⠀
• 1 cup apple cider⠀

GLAZE ⠀
• 1 c powdered sugar⠀
• 2 tbsp pure maple syrup⠀
• 1 tbsp almond milk⠀
• 1 coffee maple cacao LivBar

Directions⠀
1. Preheat oven to 350 degrees and spray donut pan with cooking spray. ⠀

2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, salt, and coconut sugar. ⠀

3. In another bowl, whisk together the lemon juice, melted and cooled butter, vanilla, egg yolks, and apple cider. Make a well in the center of the dry ingredients and pour in - mix gently.⠀

4. In a third bowl, whisk the two egg whites for about a minute or two with a fork to get them a bit thicker so they add fluffiness to the doughnuts. Add the egg whites to mixture and stir until incorporated.⠀

5. Transfer mixture to a ziplock bag and cut the corner tip off to pipe into the donut pan. Fill each pan well 1/2 full without covering middle section. Cook about 8-10 minutes and allow to cool completely before glazing.⠀

6. For the icing mix together the powdered sugar and maple syrup then slowly add almond milk until you reach desired consistency. Don’t add too much too quickly. ⠀

7. Dip donuts in icing and place on a rack to drip dry. Top with crumbled LivBar before icing sets!⠀
