National Cherry Cobbler Day

Did you know that May 17th is National Cherry Cobbler Day? If not, now you do, and we think you should celebrate. In honor of this glorious day, we decided to whip up our version of cherry cobbler - and guess what? It's healthy. 

It's no secret that LivBar loves cherries - we used them as a main ingredient in our Vegan Lemongrass Cherry Matcha LivBar, which is our not-so-secret ingredient in this recipe. Cherries have numerous health benefits - from antioxidant and anti-inflammatory compounds, to boosting exercise recovery, there are so many reasons why cherries should be a part of your regular diet. Now, we aren't saying that you should go ahead and eat cherry crisp or cobbler as your post-workout fuel, but you shouldn't feel guilty about eating a dessert made with whole-food ingredients.

 

To spice it up, we threw in a chopped up granny smith apple to add a bit of tartness to help balance out the sweetness and deep flavor of the cherries. Those two fruits paired with the crumble is a game changer. Want to know what the cherry on top is? (Pun absolutely intended.) It's gluten-free, dairy-free, refined-sugar free, and vegan. WIN.

Gluten-Free Vegan Cherry Apple Crisp

Ingredients

Filling

  • 4 c frozen sweet cherries - thawed
  • 1 granny smith apple, chopped
  • 1/2 lemon - juiced
  • 3 tbs coconut sugar
  • 2 tbs arrowroot powder
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon - optional 

Crumble

  • 1 c gluten-free rolled oats
  • 1/2 c gluten-free all purpose flour
  • 1 Lemongrass Cherry Matcha LivBar - crumbled
  • 1/3 c coconut sugar
  • 1/3 c coconut oil - melted & cooled
  • 1/2 tsp pink salt

Directions

  1. Preheat oven to 350 degrees. 
  2. To make the filling, combine all of the filling ingredients in a large bowl and mix until well combined. Set aside.
  3. In a separate bowl, combine the oats, gluten-free flour, LivBar, coconut sugar, salt, and mix. Add in the coconut oil and fold ingredients together until you reach a crumbly mixture. 
  4. In an 8" greased cast iron skillet (or similar), pour in your cherry mixture and sprinkle the cherry crumble over the top. 
  5. Bake for 30-40 min until bubbly and golden brown.
  6. Let cool and serve with dairy-free ice cream! We love this dairy-free ice cream.
