Citrusy, spongey, and perfectly sweet, these grain free lemon blueberry donuts are baked to perfection and have bursts of blueberries throughout. A simple grain free mix starts with almond flour, arrowroot, eggs, and coconut sugar. Fresh blueberries and lemon juice and zest flavors the donuts and the optional addition of crumbled LivBar right into the batter brings extra contrasting texture.
Inspired by our Ginger Lemon Turmeric and Blueberry Vanilla LivBars, these baked donuts are a perfect combination of the two flavors. And those fresh blueberries add another layer of moisture and sweetness to bites of the donuts! To finish the baked goods, a simple glaze can be drizzled on top and will make them even more moist. You can even add a squeeze of lemon juice to the glaze for extra tart citrus flavor.
Rather than those packaged processed donuts that contain preservatives and grains, these grain free lemon blueberry donuts are quick to bake and arguably much tastier. This recipe contains just whole ingredients that you’re familiar with and can easily opt for when the donut craving hits. Plus, they're dairy free too!
Preheat the oven to 350 degrees Fahrenheit and grease a donut pan for 8 donuts well.
In a medium bowl, whisk together the eggs, coconut oil, maple syrup, vanilla extract, lemon juice, and lemon zest until well combined. Add the almond flour, arrowroot flour, baking powder, and a pinch of salt and stir well to combine.
Gently fold the blueberries and if desired, a crumbled LivBar, into the batter.
Spoon the batter into the greased donut pan and bake for 12-15 minutes or until baked through as a toothpick inserted in the center comes out clean. Let cool.
While the donuts are cooling, whisk together your desired amount of powdered sugar or monk fruit and water or dairy free milk until smooth. Drizzle the glaze over the baked and cooled donuts and enjoy!
