Fun fact: October 29th is National Oatmeal Day! Naturally we wanted to create a recipe to honor this day. Plus who doesn't love a fall-inspired oatmeal dish?! This recipe is quick, easy, can be made ahead of time, and is sure to be a crowd pleaser. The combination of thick creamy oats with caramelized pears and fall spices is one-of-a-kind.

Oatmeal is a hearty breakfast option that is great for fueling your day and will keep you satisfied until your next meal. (Oats are great for sweet treats, too - like our Vegan Cherry Apple Crisp!) We love when fall rolls around because that means pear season is upon us! Although they taste delicious on their own, we love using them in smoothies, baked goods, and nutritious dishes. Pears pack a ton of vitamins, minerals, and powerful plant compounds that can aid in your health. 

We used a green anjou pear for this recipe, however you can use any kind of pear desired. If you're not a fan of pears, this recipe can easily be substituted with apples and peaches

Maple Spiced Caramelized Pear Oatmeal

Ingredients - Makes 2-3 Servings

Oatmeal

  • 1 cup gluten free oats - we love One Degree Organics
  • 2 cups dairy free milk - we used unsweetened almond
  • 1.5 tbsp pure maple syrup 
  • Pinch of sea salt

Topping

  • 1 pear - sliced
  • 2 tbsp vegan butter or coconut oil
  • 2 tbsp pure maple syrup
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • Sea salt to taste
  • Crumbled LivBar to serve

Directions

  1. In a medium saucepan over medium heat combine your oats, dairy free milk, maple syrup, sea salt, and stir to combine.
  2. Once your mixture starts to simmer, lower heat to low and allow to simmer for about 10 minutes - stirring every 2 minutes. Set aside once your oats are cooked and mixture is thickened. Note - it should not be runny. 
  3. To make your pears, heat a small skillet over medium heat.
  4. Add your vegan butter, maple syrup, cinnamon, nutmeg, a pinch of salt and stir. 
  5. Once it starts to simmer lower your heat to low and add your pears. 
  6. Toss the pears in the mixture and set a timer for 10 minutes. Flip your pears every 2 minutes as they caramelize. One softened remove from heat. 
  7. To assemble your oatmeal divide the oats evenly in serving dishes. Top with caramelized pears. Drizzle the caramel sauce over the top and sprinkle with crumbled LivBar.
