Banana pudding for all!

Did you know that November is National Banana Pudding Lovers Month? It's okay, we didn't either until recently, but we thought we would celebrate by creating our own version of classic banana pudding! These vegan banana pudding cups are so easy to put together, can easily be doubled if hosting for a crowd, and are most definitely kid-friendly.

To make these banana pudding cups we used crumbled LivBar as the base instead of classic vanilla wafers. The LivBars add the perfect amount of crunch in addition to a multitude of superfoods - we'd say that's a win-win. If you're able to find boxed vegan vanilla pudding packets, you can keep it simple by using those. If you're a little more adventurous, you can make your own homemade vegan vanilla pudding. This recipe is a great example!

Bananas are an ingredient we love working with when creating recipes. Bananas aid in promoting a healthy digestive system, heart health, kidney health, and can help keep you full! They're packed with many other nutrients, antioxidants, fiber and work well in so many different recipes. One of our favorite ways to use bananas is when baking because are a great natural sweetener. No wonder bananas are one of the most popular fruits out there!

Vegan Banana Pudding Cups

Ingredients - Makes 4

  • 1 cup vegan vanilla pudding
  • 1 cup dairy free cool whip
  • 1 banana sliced thinly
  • 1 LivBar flavor of choice


  1. In a small bowl fold the dairy free cool whip or whipped cream into the vanilla pudding. Allow to chill in the fridge for 1-2 hours to firm up.
  2. To assemble the banana pudding cups, crumble ¼ LivBar into the bottom of a small jar.
  3. Follow by laying 4 banana slices into each cup.
  4. Divide the pudding mixture evenly between all of the jars.
  5. Top with more sliced banana and cinnamon if desired.
