An Easy, Go-To Snack
It's no secret that LivBar loves chia seeds - how can you not? They're great egg substitutes for baking, a fantastic smoothie booster, have incredible health benefits, AND you can make pudding with them?!
We've used chia seeds in our recipes before - like this Quick & Easy Raspberry Superfood Jam - and this chia pudding won't be the last.
This recipe utilizes the beloved blueberry that we use in our Blueberry Vanilla Kale LivBar. Blueberries are a great snack on their own that satisfies any sweet tooth! To make this sweet treat you'll need fresh blueberries, banana, coconut milk, cinnamon, pure maple syrup, vanilla, and chia seeds of course! We love this brand. The final product is a slightly sweet treat that is filling and simply tastes GOOD.
Vegan Blueberry Chia Seed Pudding
- 2c coconut milk
- 1c fresh blueberries
- 1 banana
- 1/2c chia seeds
- 1tbs pure maple syrup
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- In a medium bowl, mash the banana until smooth. You want there to be next to no chunks.
- Whisk in the coconut milk, maple syrup, vanilla, and cinnamon.
- Stir in the chia seeds.
- Cover and store in the fridge for at least 2 hours to thicken up.
- Take out of the fridge and stir in the blueberries.
- Serve and garnish as desired!
