The simply refreshing vegetarian and gluten free dish can easily be enjoyed as a side, or made as a main character for lunch.

The texture and bite of curly leaves of kale fits just so among wild rice as a base for this salad. The sweetness in the pomegranate seeds and apple slices play well with honey in the dressing drizzled over top. A zesty bite of dijon in the dressing mixes with tangy apple cider vinegar and shallot, balancing out a savory palate.

Vegetarian Kale & Apple Salad with Honey Dijon Dressing

Salad Ingredients

  • 1 head curly kale, chopped
  • 1/2 lemon, juiced
  • 1/2 tbsp olive oil
  • 1/2 cup pomegranate seeds
  • 1 cup cooked wild rice
  • 1/2 apple, thinly sliced
  • Ginger Lemon Turmeric LivBar - crumbled

Dressing Ingredients

  • 1 shallot, finely diced
  • 3 tbsp apple cider vinegar
  • 1 tbsp dijon
  • 1/2 tbsp honey
  • 1/2 cup olive oil
  • Salt & pepper to taste


  1. To make the dressing, combine the diced shallot and apple cider vinegar into a small bowl. Allow to sit for 5-10 minutes.
  2. While the shallot is soaking, combine the kale, lemon juice, and olive oil into a large bowl. Using your hands, gently massage the kale until the leaves break down and are soft.
  3. Add the pomegranate seeds, cooked wild rice, and sliced apple. Toss to mix and set aside.
  4. Finish making your dressing by whisking in the dijon, honey, olive oil, salt, and pepper.
  5. Drizzle desired amount of dressing over the kale salad mix and toss to coat. Store any leftover dressing in the fridge. 
  6. Finish by crumbling 1/2 - 1 Ginger Lemon Turmeric LivBar on top. Serve immediately.
